Ingredients
  

  • 1/4 cup Fresh Mangoes ( diced )
  • 1/4 cup Fresh Peaches ( sliced or diced )
  • 8-10 Fresh Mint Leaves
  • 1/2 Fresh Lime ( cut into wedges )
  • 1.5 tbsp Sugar Syrup
  • 3/4 cup Club Soda
  • 1 cup Crushed Ice
  • Fresh mint sprigs, lime wheels, and fruit slices for garnish

Method
 

Muddle the Fruits & Lime:
  1. In a sturdy highball glass, add the diced mangoes, sliced peaches, lime wedges, and simple syrup. Use a cocktail muddler to gently press down, releasing the juices from the fruit and the essential oils from the lime skin.
Add the Mint:
  1. Slap the fresh mint leaves between your hands to awaken their aroma, then drop them into the glass. Muddle very gently a few more times—do not shred the leaves, or they will taste bitter.
Fill with Ice:
  1. Pack the glass to the top with crushed ice.
Top & Mix:
  1. Pour the club soda over the ice. Use a long bar spoon to gently stir from the bottom up, lifting the muddled fruit and beautiful mint layers throughout the glass.
Garnish & Serve:
  1. Garnish with an extra sprig of fresh mint, a lime wheel, and a small skewer of mango and peach slices. Serve immediately with a straw!

Notes

  • Sweetness Customization: Since this is a mocktail, you can easily swap the club soda for ginger ale or lemon-lime soda (like Sprite or 7Up) if you want a sweeter, extra-fizzy drink. If you do this, scale back the simple syrup so it isn't overpowering!
  • No Fresh Fruit? No Problem: If mangoes and peaches aren't in season, grab frozen fruit chunks and let them thaw to room temperature. Thawed frozen fruit is actually incredibly easy to muddle because freezing softens the fruit's cellular walls!
  • Make it a Pitcher: Hosting a party? Multiply the ingredients by 6 or 8 and muddle everything in a large pitcher. Mix in the syrup and fruit base ahead of time, but hold off on adding the ice and club soda until the exact moment your guests arrive so it doesn't lose its fizz.
